Raw, Vegan, Gluten-Free, Spiked Cocomon Treats

Coconut + Lemon + Vodka = Yummy Summer Treat


These treats have so many positive attributes: vegan, raw, gluten free, grain free, yummy, easy to make, and easy to eat. If you're heading to a bar-b-que or just want a fun little treat to enjoy at home, these are great. They don't require any cooking or baking. It's a simple one bowl recipe. 
Here you go:

Ingredients:

1/2 cup unsweetened shredded coconut (plus extra for dusting)
1/2 cup almond flour
1 TBSP coconut oil, melted
1 TBSP pure maple syrup or natural honey
1/2 tsp lemon juice or 1/4 tsp lemon extract
1 TBSP Vodka (I use Smirnoff because it is gluten-free)
Tiny pinch of salt

Process:
Combine all ingredients in a bowl and mix together. A wooden spoon works best for me. Using your hands, roll dough into small balls. I usually make about 8 with this recipe. Roll each ball in shredded coconut. Place treats in fridge for at least an hour before enjoying!
