Child approved, chocolate lover approved and vegan approved - these hunks of delight are a definite treat to make!
We usually don't think healthy when we think about brownies or desserts but with only the natural sweetness of dates, these treats can be guiltlessly consumed at any time. They are extremely easy to make with very few dishes to clean afterward - and that's always a plus!
Ingredients:
1/2 cup coconut (optional but very delicious)
1/3 cup cocoa powder
1 cup almond meal
2 cups Medjool dates
Process:
If your dates are not fresh, soak them in water for about an hour to soften them up. Drain water before using. Then process them in a food processor until they form a sticky ball. Add the remaining ingredients and process until combined. Line a pan, (8x8) with parchment paper and then press the mixture into the pan. The mixture will be sticky. Place in refrigerator for a few hours. Dust lightly with more cocoa powder. Lift out of the pan and cut into pieces. That's it - ENJOY!
