Mini Chocolate Doughnuts

Mini Chocolate Doughnuts: Vegan and Oh So Cute 

Some mornings you just need a doughnut to get your day started. I'm not a fan of store bought doughnuts because 1. they're fried and 2. they're heavy on the stomach. 
Luckily, this recipe is easy to make, baked not fried, and easy on the gut.   

Recipe: Makes 11-12 mini doughnuts

Ingredients:
1 tsp instant coffee
2.5 heaping tbsp cocoa powder
6 tbsp all-purpose flour
1/2 tsp baking powder
1/8 tsp baking soda
1/3 cup plant based milk (I used almond)
2.5 heaping tbsp brown sugar
1.5 tbsp plant based butter (I used Earth Balance)
1/2 tsp apple cider vinegar

For the Glaze:
1/2 cup powdered sugar
1.5 tbsp cocoa powder
2 tbsp plant based milk

Method:

Pre-heat oven to 350 degrees and lightly grease a mini doughnut pan. 
If you want to use a full sized doughnut pan, this would probably make 3 full sized doughnuts and the recipe can easily be doubled if you want a larger batch. You could also use a muffin pan if you doughnut have anything else. (Did you see what I did there?) 

Melt the butter and mix it together with the brown sugar, plant based milk, and apple cider vinegar. In another bowl mix together flour, cocoa powder, coffee, baking soda and baking powder.  Combine the wet and dry bowls together and mix. This batter will be thick and does not need to be smooth. Scoop batter into a piping bag or a plastic sandwich bag with the corner snipped off. Squeeze batter into the doughnut cavities. 

Bake your mini doughnuts for 8 minutes or until a toothpick comes out clean. If you decide to bake full sized doughnuts, you will need to extend the baking time to 10-12 minutes. Doughnuts will rise and smell delicious. While they are baking, you can make the glaze. Mix all the ingredients together and stir well. Allow doughnuts to cool for 2 minutes before removing them from the pan and dipping them in the glaze. If you want to add sprinkles, now would be the time because the glaze does firm up after a few minutes. If for some strange reason you don't end up eating these all in one sitting, store them in a covered container.
