Apples and cinnamon are one of my favorite flavor combinations. It's like Bert & Ernie, Kermit & Miss Piggy, Fries & ketchup or my cat & cupcakes; they just go together in perfect harmony.
These apple cinnamon pancakes taste so delicious, you won't even need syrup.
Ingredients:
1 cup gluten free all-purpose flour
1 Tbsp ground flaxseed (optional for extra nutrients)
2 tsp baking powder
2 tsp cinnamon
1 tsp vanilla
2 Tbsp real maple syrup
1/4 cup unsweetened natural applesauce
1 cup almond milk
Process:
Pancakes are so simple to make. First combine all the dry ingredients. Then in a separate bowl, combine the wet ingredients. Make sure to mix up the wet ingredients really well so you don't get any syrup stuck to the bottom of the bowl.
Add the liquid to the dry a little at a time mixing well in between. Once the two mixtures are fully combined and there aren't any lumps, you're ready to make your pancakes. Make sure the griddle or pan is really hot, but set the temperature to medium. Spray or grease your pan. I find when I work with gluten free flours, they tend to stick more. I often have to spray the pan several times throughout the cooking process. Pour 1/4 cup of batter onto the pan. You'll know it's time to flip the pancake once the pancake starts to bubble up. Flip it and cook for about another 1-2 minutes.
Repeat with the remaining batter and that's it - you're ready for dessert - I mean, breakfast! I topped mine with bananas and then for added protein I also added some leftover vegan cream cheese that I had made out of cashews. Yummy!!!!! Enjoy!
