Mornings are not easy for most people. It's a hectic time, lots of rushing around, looking for things, getting ready, helping others get ready, etc. Whether you're single, a mother, a father, or a spouse, mornings are not most people's favorite time of day. As much as I would love the idea of having extra time in the morning, I just never do. Even when I set my alarm for an earlier time, mornings just always feel rushed. The intention of these bars were so I could have something quick in the morning if I was too rushed to make something for myself or if I want a change from my usual oats or smoothie. And another great thing about these bars, they can easily be vegan and gluten free. Enjoy!
Ingredients:
1.5 cups oats (Gluten Free oats if you want a GF treat)
1/4 cup flax seeds
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/4 cup applesauce
2 TBSP honey
3 egg whites or egg substitute if you want vegan
1 tsp vanilla
1/4 TBSP cinnamon
3 ripe bananas
Additives: dark chocolate chips, peanut butter chips, or raisins
Process:
Throw all the ingredients into a blender and blend! Once everything is smooth, pour batter into prepared 9 inch pan. Add additives on top and lightly swirl in with a fork. Bake at 350 for 16-20 minutes or until a toothpick comes out clean. Let cool, remove from pan, cut into bars and store in refrigerator.
