Protein Ice Cream Cookie Sandwiches - Vegan and Gluten-Free


These treats are protein filled and your children might not even notice that the main ingredient is chickpeas! You can grab one of these out of the freezer and eat it with zero guilt. In fact, eat two of them if you want!
A few notes for you before we go through the recipe. 
1. The dough feels a little different than a standard cookie dough; it's drier. I use a wooden spoon to mix it and then I use my hands to mix in the chocolate chips and press it firmly into the pan.  

2. You want ripe bananas. Brown spots are good when it comes to bananas. Yes, the sugar content is higher (it's a natural sugar) however the riper they are, the less bloating they'll cause. And let's be honest, no one wants a big bloated tummy! 


3. I use a round cookie cutter because I like the shape. If you do this, there will be scraps of dough. Don't throw them out! Instead, smash it all together with your hands and create little rounds of protein bites for a quick little snack.

  


Ingredients:

1 can of salt-free chickpeas (rinsed, peeled and drained)
3 TBSP natural honey
1/2 cup almond butter
1/4 cup coconut flour
2 1/2 frozen bananas 
1/2 cup vegan chocolate chips
1 scoop vanilla plant based protein powder

Process:
In a food processor, combine chickpeas, honey, and almond butter. Mix until creamy. At this point, take a little taste. If you think you might want sweeter, add a little more honey. With a spoon, mix in coconut flour. Dough will become thicker. Add chocolate chips by hand, mixing it all together. Press into 8 x 8 pan lined with parchment paper. Place in freezer for about an hour. To make ice cream, simply process frozen bananas and protein powder until creamy. Easy! 
Remove dough from freezer. At this point you can use a circle cutter to make cookie rounds and create round shape sandwiches. Throw them back into the freezer just to firm up a bit before you eat. 

Or, if you want an easier route, simply slice the dough in half. Pour the ice cream over one half and cover with the other half of dough. Allow to firm up in the freezer for about 30 minutes. Remove from freezer and slice into rectangular sandwiches.  

Either way, they'll taste the same! Enjoy!
