Vegan Peanut Butter Drops

Stop buying Reese's Peanut Butter Cups!
The other day I watched my friend scarf down a Reese's Peanut Butter Cup faster than I could read the list of ingredients on the package. I know these are a popular treat but they're filled with sugars and ingredients that I don't want my friends eating. So I decided to mix up a few ingredients and make a healthier and vegan version of this peanut butter chocolate treat. 
Easy to make, easy to enjoy!

Ingredients:

1/2 cup creamy natural peanut butter (check labels, peanuts should be the only ingredient)
1/2 tsp vanilla
2 TBSP Syrup or Agave (or Honey if you use it)
1/4 cup vegan dark chocolate chips

Process:

Blend together the peanut butter, vanilla and syrup. It will be soft and sticky. Using a regular teaspoon, drop small amounts of the mixture onto a plate covered in wax paper. Place in the freezer for 10 minutes. Melt chocolate until smooth. I microwave for 30 seconds, stir, microwave again for 30 seconds and it's perfect. Remove peanut butter drops from freezer and remove them from the wax paper. They might be little sticky still, but they should be more solid than before. Using a toothpick or a fork, dip each dollop of peanut butter into the melted chocolate. Shake off the excess chocolate and replace back onto the wax paper. Place dipped treats in the refrigerator for about 5 minutes to firm up the chocolate. Enjoy!
