Chocolate Chip Cookies For One - Healthy, Vegan and Gluten Free


Let's face it, some days you just want a cookie. Not a whole batch of cookies that you'll end up devouring by yourself, but just a cookie. Maybe two. 

I have come to your rescue. This recipe is for healthy, vegan, gluten free, chocolate chip cookies that you can easily make and not feel guilty about eating the entire batch (because the entire batch consists of only two cookies!)

Get out a glass of cold almond milk and let's bake some cookies!

Ingredients:

1/3 Cup GF Oat Flour
1/4 tsp Baking Soda
2 TBSP Coconut Sugar
2 tsp Coconut Oil
1 Large TBSP Almond Milk
Vegan Chocolate Chips

Method:

Preheat oven to 350 degrees. Mix all ingredients except chocolate chips together until well combined. If it's too dry, add a little more milk until it's a dough consistency. Add chocolate chips. Form into two cookies and place on a lightly sprayed cookie sheet. Bake for 14 minutes or until slightly golden. Let cool on pan for about 5 minutes, don't worry, they'll still be warm and soft. Enjoy!
