Imitation Snickers Bites - Vegan and Gluten Free


How many times have you been in the checkout line at the grocery store and you've had to force yourself to look away from the candy bar selection? Or maybe you gave in, grabbed one and felt guilty about it later. 

How often at work do you go to the vending machine for a quick snack only to feel bad about it later, knowing that that Snickers bar was definitely not part of your dieting plan?

Good news - you don't have to feel guilty for eating these little treats! They are little balls of energy and deliciousness. Take a container of them to work and keep them in your desk drawer for next time you're tempted to go to that vending machine. Save yourself the guilt and the dollar. 

Ingredients:

Center Layer:
3/4 Cup Roasted Peanuts
1/2 Cup Pitted Medjool Dates
1/2 Tsp Vanilla
1/4-1/2 Tsp Water
25-30 Whole Peanuts

Outer Layer:
1.5 Cups Roasted Peanuts
1.5 Pitted Medjool Dates
1/4 Cup Cocao Powder
1-2 Tsp Water

Process:

For the center layer: In a food processor, process peanuts until they are meal-like. Add the dates, vanilla, and water. Process until the dough forms. If it's too dry, add a little more water. You want to be able to roll it into a ball. Taking out about a 1/2 tablespoon, place a whole peanut in the middle and roll the dough around it. Set those centers aside. 

Outer Layer: In the food processor, process peanuts until they are meal-like. Add the dates, cocao powder, and water. Process until dough has formed. Add more water if it's too dry. Again, you want to be able to roll into a ball. This time, take out about one tablespoon of the mixture. Roll it into a ball, then flatten it out in your palm. Add one of the center balls to this and wrap it around, forming a ball. 


That's it! They can be stored in a plastic container, no need for refrigeration. Enjoy!
