Who says vegans can't have a little Greek fun? Not me! When my family is cooking the lamb and enjoying their gyros, I'll be enjoying my own!
This is an easy to make chickpea gyro based on the traditional Greek gyro, complete with tzatziki sauce. The roasted chickpeas serve as a hearty filling to satisfy your taste buds. Yum!
Ingredients:
1 Can chickpeas
Lettuce
Tomato
Red Onion
1/4 tsp Black pepper
1/8 tsp Cayenne pepper (more if you like spicy!)
1/2 Tbsp Paprika
Pinch of salt
1 Tbsp Olive oil
Pita Flatbreads
For the Tzatziki Sauce:
1/2 cup Cucumber
2 Tbsp Dill, chopped fresh
2 tsp Garlic, chopped fresh
1/4 cup Lemon juice
3/4 cup Coconut milk
Pinch of salt
Process:
To get a thicker sauce, you'll want to make this the night before, or perhaps the morning of. Chop up the cucumbers and remove the seeds. Using a few paper towels, squeeze the cucumber to remove some of the excess moisture. Combine everything into a bowl, mix well and place in the refrigerator.
Next, it's time to prepare the chickpeas. Rinse chickpeas in a bowl of water until the water runs clear. Drain all the water.
There are all kinds of methods shared on how to remove the skins, but honestly, it takes less than 3 minutes to pinch each bean individually and let it slide out of its shell. Once all the skins have been removed, pat the chickpeas dry with a paper towel. Return them to a bowl and add the black pepper, cayenne pepper, paprika, salt and olive oil. Using a wooden spoon, gently toss everything together. Be careful not to mash the chickpeas, we want these whole for the gyro.
Spread mixture onto a cookie sheet and bake for 15-20 minutes at 400 degrees. My oven gives off a lot of heat so 15 minutes is enough for me. Roasting chickpeas like this really brings out some delicious flavors.
Now it's time to build your gyro. Chop up the lettuce, slice up the tomato and red onion and remove the tzatziki sauce from the fridge. On the pita bread, add the tzatziki and about half the chickpeas. Top with the lettuce, tomato and onion, fold in half and you have yourself one incredibly delicious vegan gyro! Enjoy!
