The problem with brownies (if you can really call it a problem) is that you bake a tray of them and you tell yourself you're going to have just one. After you pull them out of the oven and that warm brownie smell fills your nostrils, that "just one" becomes the one you eat immediately and it's so hot it actually burns your tongue. But it's good, it's darn good. Then you innocently eat another one while you're looking for a container to store them in and alas, they all fit in the container except one - so you eat that one, too. Then an hour later when your children come in for their snack you sit down and have a brownie with them. And of course, you pretend it's your first one, but in reality that's four brownies. Then you feel guilty and swear to never make brownies again.
I have the solution. Just make one brownie! Then you can eat the whole batch and not feel guilty about it. This recipe was actually enough to fill two small ramekins. You could eat both and not feel bad. I made two to share with a friend and on his he wanted some peanut butter chips that he found in my baking cupboard - those are NOT vegan. But adding peanut butter to this would be super easy - just swirl it into the batter before you microwave.
Okay, get ready, because these are really easy to make and really easy to devour!
Ingredients:
3 Tbsp Gluten Free All Purpose flour
3 Tbsp Cocoa Powder
2 Tbsp Pure Maple Syrup (or favorite sticky sweetener)
2 Tbsp Almond Milk
2 Tbsp Melted Coconut Oil
1 Tbsp Vegan Chocolate Chips (a few extra to sprinkle on top!)
Process:
Mix all ingredients together in a microwave mug, small bowl, or ramekin. Top with a few more chocolate chips and microwave for 40 seconds. It'll be soft and gooey and you have my permission to eat the whole batch! Enjoy!
